Turkey leftovers

My favorite thing to do with leftover turkey is to just make sandwiches. I like them on toasted whole wheat bread, with mayonnaise and green olives. I might just have one for breakfast!!!

One thing I am seriously considering is buying a bigger refrigerator. Mine is too little!!

I love turkey sandwiches too! After we've gotten most of the meat of the turkey, I chuck it in my soup kettle and make turkey soup. The problem is deciding-should I make Turkey Gumbo? or Turkey noodle? or Turkey Vegtable? Then there's Turkey Rice... so many choices!

Mr. Food-on the news had a good idea for left overs. Mix left over stuffin/dressing with an egg...press into muffin tin-sides and bottom...mix gravy, cubed turkey and veggies-peas and carrot, corn, etc...spoon into dressing...bake at 375 for 18-20 min...enjoy

I saw a similar recipe somewhere recently-except you used canned biscuit dough instead of dressing-which I would have to do,'cuase the dressing is already gone! Last year I made too much......I think I might try it-my kids LOVE anykind of little individual tarts, pies, quiches etc. When I made my pies this year, I had some scraps of pie dough and just a little pumpkin pie filling left- not nearly enough for a full pie, so I made spread the pie dough inside a couple of custard cups and poured in the filling-I baked about half as long as the full size pies the kids loved having "personal pies"
