I am thinkng of egg recipes and not much else under this letter, but maybe all of you have some other ideas. Post away!

I love this stuff....

Egg Foo Young
Serves 2-4

6 Eggs
2 cups Mixed Oriental vegetables (can use canned, or just use bean sprouts)
2 tablespoons Oil

Sauce:
1/2 cup Chicken broth
1 teaspoon Sugar
1 teaspoon Rice vinegar
2 tablespoon Soy sauce
1 teaspoon Cornstarch

Heat the sauce ingredients (except the cornstarch). Mix the cornstarch with 1 teaspoon of cool water and whisk it into the sauce. Simmer for 5 minutes. Set aside. Heat the oil in a heavy skillet. Whip the eggs. Drain the vegetables. Add them to the eggs. Spoon the mixture into the skillet to form small patties. Turn, browning on both sides. Serve warm, drizzling the warm sauce over the patties. This is also good if you add a little chicken, pork or WHATEVER! A very flexible recipe.

Enchiladas (Chicken)

2 cups chopped cooked chicken or turkey, 1 cup chopped green bell pepper, 1- 8 oz package cream cheese, cubed, 1- 8 oz jar of salsa, divided, 8- 6 inch flour tortillas, 3/4 pound (12 oz) velveeta cheese spread, cut up; 1/4 cup milk. Stir chicken, bell pepper, cream cheese and 1/2 cup salsa in saucepan on low heat until cream cheese is melted. Spoon 1/3 cup chicken mixture down center of each tortilla; roll up. Place, seam-side down, in lightly greased 12 x 8 baking dish. Stir cheese spread and milk in saucepan on low heat until smooth. Pour sauce over tortillas; cover with foil. Bake at 350 degrees for 20 minutes or until thoroughly heated. Pour remaining salsa over tortillas. Makes 4 to 6 servings. In His Grace, Sissy

Elephant Potpie -- The name given this dish, from the Depression Era, was intended to add a bit of humor to the hard times. -------

2 pounds pork sausage or wieners, sliced; 2 large cans sauerkraut, drained ( or the equivalent); 1 large chopped onion; salt; 20 to 25 medium to large potatoes; butter. ---- Cook the potatoes and make mashed potatoes. Salt to your taste. Line bottom of 9 X 12 X 2 inch baking dish with sausage (or wieners). Bake sausage at 350 degrees until browned. Drain off excess grease. Cover meat with sauerkraut and onion. Spread potatoes on top of the previously mentioned ingredients. Can dot with butter. Bake at 350 degrees until potatoes are just beginnig to brown. (If using wieners, just top with remaining ingredients, if wieners are precooked, and bake.)
