I am looking for a recipes for hard salami and sausages. I enjoy bratwurst and other kinds and would like to make them myself. Also any salami recipes would be appreciated. thanks

Thank you, Marvin!! I've been looking for good sausage recipes - just came into some beautiful ground elk & wanted to try using it to make a smoked sausage. We're new to smoking but have had great success with salmon & cheese. Can't wait to try some sausage recipes. Thanks again.
