Does anyone know of a recipe for making walnut extract for baking? I have an overabundance of them this year and wanted to try my hand at it. Thanks

I'm not sure if you can do it yourself or if there is some special process. If I were going to try it, I think I would try to do it like people make the homemade vanilla extract. General idea is to use several vanilla beans, split them and barely cover with vodka in a small jar. Either use a dark colored jar or put in a dark place. Shake well every other day or so. I have heard people say to let it ripen anywhere from 2 weeks to several months, average seems to be at least a month. I guess I would try the same thing with the walnuts....you haven't a lot to lose except for your time. I think I would use at least a 1/4 or 1/2 c. of broken or crushed walnuts though, rather than just a couple like the vanilla beans. I did spend some time doing a search last night on the subject and didn't come up with anything, only how to make liqueurs using walnut extract. :( Hope this gives you some ideas. I'll keep searching.
