Anyone have any good "N" recipes?

Super/Dupper Nachos

1 can of refried beans 1 pkg of taco seasoning 2 or 3 small avocados about a tablespoon of lemon juice about a 1/4 cup of sour cream a can of sliced ripe olives/drained 2 tomatoes chopped about 6 or so green onions chopped 1 cup of shredded cheddar cheese tortilla chips

combine the beans & taco seasoning & spread it out in the middle of a big platter---(I use a big meat platter)--- mash the avocados with the lemon juice. Spread over the beans then I put the sour cream & the olives & the tomatoes & onions & cheese in layers over the top of it all---surround with tortilla chips!!! I like to warm the chips before I put them on thr platter----

I got hooked on these when I lived in New Orleans several years ago. They are SOOO GOOOD..... but not on my diet at the moment. Oh well!

New Orleans Beignets
(pronounced ben-yays)

1 cup milk
2 tbsp sugar
3/4 tsp salt
1/2 tsp nutmeg
1 envelope dry yeast
2 tbsp lukewarm water
1 egg
2 tbsp vegetable oil
3 1/2 cups sifted flour
fat for deep frying
sifted confectioners sugar

Scald milk and dissolve it in the sugar and salt. Add nutmeg. Let milk cool to lukewarm and combine with softened yeast in lukewarm water. Stir in the egg and oil and thoroughly blend in flour, a little at a time. Cover the bowl lightly with a cloth and let dough rise in a warm place until it has doubled in bulk, about 1½ hours. Turn the dough out onto a wellfloured pastry board, deflate it and knead it gently. Roll it out into a rectangle 18" long and 12" wide and cut into 36 pieces, each 3" by 2". Cover lightly with a towel and let beignets rise on the pastry board for 30 minutes. In a fryer or large saucepan, heat fat for deep frying to 375 degrees. Cook the beignets, a few at a time, until they are golden brown. Drain quickly. Dust immediately with powdered sugar and serve at once while hot.

Spiced Nut Mix- Received a tin of these for Christmas and just got the recipe this weekend. The variety of nuts can vary. Mine had pecans and did not have raisins. Can't eat just one!

3 egg whites

2 teaspoons water

2 cans (12 oz. each) salted peanuts

1 cup whole blanched almonds

1 cup walnut halves

1 3/4 cup sugar

3 Tbls. pumpkin pie spice

3/4 tsp salt

1 cup raisins

In a mixing bowl, beat egg whites and water until frothy. Add nuts, stir gently to coat. Combine sugar, pie spice and salt, add to nut mixture and stir gently to coat. Fold in raisins. Spread into 2 greased 15" x10" x1" baking pans. Bake, uncovered at 300F for 20-25 minutes or until lightly browned, stirring every 10 minutes. Cool. Store in an airtight container. Yield: about 10 cups.
