There're quilts cookies, but the recipe is packed. It basically a very large gingerbread cookie, decorated to look like a quilt. There quiche, but the recipes are packed, never even ate one of those.

These are very yummy. I'm a wimp when it comes to hot things though, so I use mild green chiles instead of the jalapenos. Also, I usually cook them in a skillet, one at a time, instead of baking them in the oven. The recipe is easily adaptable to whatever ingredients you have on hand - works well with leftover chicken, turkey, beef, whatever.

Quesadillas

Ingredients:
8 (10 inch) flour tortillas
1 pound cooked pork roast, chopped
1 cup reduced-fat Monterey Jack cheese
1 jalapeno pepper to taste, seeded and minced
1/4 cup minced onion
4 tablespoons minced cilantro
1/4 teaspoon salt
1/2 teaspoon black pepper
Tomato salsa

Directions:
In large bowl, stir together the pork, cheese, peppers, onion, cilantro, salt and pepper. Arrange one-eighth of the filling on each tortilla, covering half of it. Fold the tortilla over to make a half- moon. Place quesadillas, not touching, on shallow baking pans. Bake in a 500 degree F oven until tortillas are crisp and golden; about 5 minutes. Transfer to large cutting board and cut into wedges to serve with salsa.

Queso chile con. or chile con queso 1/3 cup veg oil, 1/2 cup finely chopped onion or 3 scallions with tops, chopped, 1 clove of garlic, 1 tablespoon flour, 1 can of evaporated milk, 1 fresh medium tomato chopped, 1 pound processed cheese, cut in 1 inch cubes, 1/2 cup monterey jack cheese, 3 tablespoons finely minced jalapeno peppers and juice to taste 1 package tostadas,

Heat oil in a heavy sauce pan, Add onion and garlic and saute until onion is translucent, about 3 to 5 mins. Stir in flour , Remove from geat. Slowly add evaporated milk and remaining ingredients. Cook and stir until thick and smooth , about 5 mins. Serve warm with tostadas, At our casa ole resturant they warm tostadas in oven, and then pour warm cheese on them, there so good.

Cheryl, thank you for quesadillas, I have been buying them from sams, and they are never as good as home made, and we love them, I so appreciate the great receipes here, And melissa this was a great Idea, hope you start it over, when we get to z. Hello Melissa, "Q" is for quiche! Its easy to make. One pie crust. Mix about six eggs and a 1/2 cup of milk together. Pour mixture into pie crust. Sprinkle some grated cheese over the top. Cook at around 300- 325 degrees in a preheated oven until toasty on top!

Variations of this quick meal can be made by adding spinach, or ham, or onions or whatever your favorite is!
