expiration date on canned meat

This goes along with Barbs earlier post-how long does canned meat stay good? I canned some ground beef (Ball Blue Book method) two years ago-getting ready for that big y2k thing, and somehow they got misplaced and I found them while I was cleaning the basement before Christmas -2 or 3 jars-not a big deal to toss if they are not good, but still, I was wondering? Anybody know?

this was answered on countryside not long ago. There is also an article at Backwoodsmagazine, from Jackie Clay. She states that can good NEVER go bad,, as long as the retain a good seal. The DO loose nutrients over time,, but as long as the seal is good,, no off odor,,normal precautions,, its fine.

Open it and have a kid smell it, kids senses are much sharper than older peoples.

I would say 3-4 years with a good tight seal would be perfectly safe. For myself I probably wouldn't eat if over 5 years, so I try to keep close rotation. However I did find some venison that is from 99 and it was fine!
