flour tortilla recipe in last countryside

Hi Folks,

My husband is on a 7 week researc cruise in the Antarctic. I let him take our current Countryside and boy do I regret it! I've already asked for help for the apple cake recipe and now I need the tortilla recipe! It was super easy and we had super good results. Many tanks - Kim

Funny I was just looking at that recipe earlier wondering if it would be good lol ok here tis. These were by Marie Burke in the last Countrysider Magazine

About 1 1/2 cups flour 1/2 tsp. baking powder 1 TB oil 1/2 tsp. salt

then add about 1/4 cup water if you need the directions email and Ill get them to you

I tried the apple cake recipe and didn't have too good of luck with it. I must have done something wrong as it turned out kind of strange and Marie is right, use less sugar. It was WAY too sweet for me. My husband, the original sugar monster, liked it and ate most of the cake hinself before we had to throw it out. (Chickens were in heaven that day) I was just looking at that tortilla recipe today thinking I'd like to try it. Good to know that Kim had good results. Guess I should have put on my glasses when I was making the apple cake !

Thanks guys, here is my report on both the cake and tortillas!

Cake: my family loved it. It is more of a crumble than a cake - at least mine was. We have Ozark Black stored apples. They aren't too sweet so I didn't think the cake was. Next time I will substitute brown sugar at least some.

Tortillas: I will never buy tortillas again as they are so simple and cheap to make. We eat them at least once a week. My only advice is double or triple the recipe if you have a family as it is a small recipe. The first time I made them everyone wanted more. I think I needed more water than was suggested too. Last night when it came time to do dinner I still didn't have the recipe so I just made it up and used white flour, baking powder and some margerine. It worked fine too. Your own home made tortillas are so much better than anything you will buy unless you have a local tortillaria.

Okay, anybody try that bread recipe where you use water that has been soaking potatoes? I mean to try but havent gotten around to it.

My tortilla recipe is easy too. 2 cups flour (if using ww, use pastry flour) scant 3/4 cup warm water 1t. salt. mix together, knead for 5 min, allow to rest for 10-20 min. So good, we never buy tortillas anymore.

I agree that home made tortillas are the best, even if you have a local tortillaria near by. I'm on the Mexican border and home made still rules.
