Boiling eggs in salted water will make the eggs peel easily.

Poaching eggs over salted water helps set the eggs whites.

Testing egg freshness: Place the egg in a cup of water to which two teaspoonfuls of salt has been added. A fresh egg sinks; a doubter will float.

That's never worked when I've done it. I took a hint from someone on Cs and use poached for hard boiled, works for most things.
