I am looking for a really GREAT cake recipe. One that is moist and flavorful. So, if you could only keep one cake recipe, what would it be? Thanks so much. By the way, I love this forum. It is really needed.

My favorite cake is an Oatmeal cake. I love it because I don't have to wait for it to cool to ice it, besides it yummy. It's a great cake to make when you need a cake in a hurry, and it travels well.Oatmeal cake
Pour 1 1/2 cups boiling water over 1 cup quick oats. Let sit while you get out other ingriedents.
Cream together:
1/2 cup marg.
2 eggs
1 cup brown sugar
1 cup white sugar
Then add the soaked oatmealAdd to first mixture:
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 cup chopped walnuts (optional)Bake at 350 degrees for 35 minutes.
Topping:
6 tablespoons margarine
1 cup brown sugar
1 teaspoon vanilla
1 cup quick oatsMix the above toppping ingredients and spread over hot cake right out of the oven and put under broiler for about 5 minutes or until golden brown. Keep a close eye on cake as the broiler will burn the cake quick!
