Fruit Cocktail Cake Recipe

I just made this cake again the other day for the umpteenth time. It is always a hit with company & it's from scratch but EASY (key word!). So, I thought I'd share it with you all.

Fruit Cocktail Cake

Preheat oven to 350 degrees. Grease & flour 9 x 13 pan.

Mix these first 5 ingredients with electric mixer until fairly smooth. 1 - 16 oz. can fruit cocktail & syrup (can be lite) 1 1/2 cups white sugar 2 cups flour 2 teaspoons baking soda 4 eggs Pour into greased & floured 9 x 13 pan.

Mix together 1/2 cup brown sugar 1/2 cup chopped walnuts Sprinkle over top of batter.

Bake at 350 degrees for 40-50 minutes.

When cake is almost done mix the following ingredients for the topping in a sauce pan. 1 cup white sugar 1 stick butter 1/2 cup evaporated milk (can be lite) Boil until smooth. Then add 1 teaspoon vanilla.

When cake is done, punch holes in top with fork. Pour topping over entire cake. Cool. Regrigerate.

are you sure it is evaporated milk, and not condensed milk for the topping? sissy

Sissy, yes, it's evaporated - and like I said you can use the low fat if you want - that's what I use & it works just fine.

Thank you for posting this recipe. My grandma taught me to make this cake when I was a kid but I lost the recipe several years ago.

Brings back memories--it was my grandfather's favorite cake and I haven't made it in a long, long time. He's been gone since the late 70s-whew! I'll have to make one again soon.
