I am in the mood to cook today! We are having a beef roast with carrots and onions, mashed potatoes, corn, homemade oatmeal dinner rolls, and brownies for dessert.

Last night we had whole wheat blueberry pancakes and eggs and Gary and grandkids had sausage. Tonight, maybe spaghetti, unless I get creative.

Spare ribs on the BBQ here... With roast garlic mashed potates, grilled artichokes, maybe some sauted green beans. Perhaps a bit of lemon ice box pie, or key lime pie for dessert.

Melissa, I would love your recipe for your homemade oatmeal dinner rolls. Could you please post it? I'm so hungry right now I can't believe I'm even reading this thread. I made pancakes and sausage and coffee for breakfast, then came to work. I've been here all day (7 hours) and now I'm starved! - LOL Don't have a clue what I'll throw together tonight. The freezer is almost bare. I do have some hamburger meat, or a ham steak, a few potatoes in the fridge, some canned veges and a small carrot cake, cake mix in the pantry. Hmmmmm.....now how can I prepare it so there's enough to go around? Any ideas? :o)

It just got started, tonight is going to be chicken cooked into obliviation in a pressure cooker until you cannot pick it up with out it disenergerating. Then it will get a dose of either yellow rice or noodles, I don't know yet. And there will be some type frozen veggies added due to guilt.

Dear Gina How do you make green chili stew? Sounds so different, Sunday dinner I will cook a pot roast, mashed potatoes, gravy, spinach fresh from the garden, and cauliflower, and strawberry shortcake. the Kids are all comeing for Sunday dinner.

Greek chicken with potatoes made a loaf of french bread for dipping in the juice. Red Onion, tomato and cucumber salad.

Greenthumbelina, make ham, green beans and potatoes. Just needs a little ham, and it feeds a lot of people. I can my own beans and we raise our potaotes from last years, and I save the seeds, so this is a cheap meal for us and very filling, and one of my kids favorites!

When I don't have a lot of meat I think of ways to stretch it a long way.
