Oatmeal Dinner rolls

Bring 2 cups of water to a boil. Add 1 cup oats (I use whole, but the quick oats would make it smoother.) Stir and simmer for 1 minute.

Add 2/3 cup brown sugar. (I have cut this down to 1/2 or used 1/2 cup of honey with good results.) also add 3 TB butter, and 1 1/2 teaspoons salt and 1/3 cup water. Mix well.

Pour into mixing bowl, and cool to 110 degrees. I just wait until it is cool enough to touch and it doesn't burn your finger, just a minute or two. Add 2 packs of yeast, I don't use the little packs so I add 4 teaspoons. Add 3 cups of flour and beat well. Now add an additonal 2 to 2 3/4 cups of flour to form a soft dough. I use 3 cups whole wheat and the rest white, unbleached flour.

Knead for 6-8 minutes (sometimes more like 5!!!) Place in greased bowl and let rise until double. Punch down dough and form dinner rolls. Let rise for 30 minutes, and bake.

This is a very forgiving recipe!! If the dough seems a little stiff don't worry, it will still be good. We are in love with these!!!

I use 325, but my oven seems hot. They get nicely brown in about 25 minutes.

I am bad about times and temperatures!! I just cook things until they "smell" done and I am not usually wrong. Just seems like when something is done it has a certain smell, and after a while you just know! I can be all the way across the house and if someone is baking I will yell that it smells done!! My daughters say, Oh no it has 5 more minutes, and I will tell them to check it and it is usually done. They think it is so funny. So anyways I usually don't time things!!!

Melissa, Is the liquid amount correct? I halved the recipe, and it wouldn't take nearly that amount of flour. But the rolls are HEAVENLY!!!!!! I brushed the tops with butter and sprinkled sugar on them before the rising in the pan.

That is the amount of water I was given, and to tell the truth I thought it was a little dry, but I am not that experienced so I thought I was doing something wrong!! I will call my friend ans ask her to check the recipe. I usually just add more water to it as I Am mixing and it seemed to do OK...

I am playing with the oatmeal dinner roll recipe. My friend says she uses 2 1/3 cups of water as listed, but to me it seemed dry and someone else commented it was also. She uses quick oats and white flour, and I used whole oats and wheat flour, so I am wondering if the whole oats and wheat soak up more water??!! Many of you probably know the answer but I am not an expereinced bread baker, as I have used a bread machine instead of doing it by hand.
