Bacon Avocado Sandwich

4 slices bacon, cooked 1/2 or 2 slices red onion Slice of Swiss cheese 1/2 avocado, sliced Thousand Island dressing or Dijon mustard Sun dried tomato bread

Spread dressing on bread and pile on ingredients in your order of choice. This sandwich is also good without the cheese. Double the recipe if making it for two people. (like Stan and me)

My favorite avocado sandwich recipe is this: Toast a couple of yummy grainy bread slices. Then layer on some sliced avocado, a handful of alfalfa sprouts and some nice thick slices of tomato. You can add a splash of Italian dressing if you like. Oh man.... that's so good! I got hooked on those when I lived in San Diego - sure is hard to find good avocados here in rural Kansas! :-)
