Recipe of the Day - Sunday Garlic Pork Roast

Sunday Garlic Pork Roast
(Overnight Crockpot Version - but can be made in oven at 325 deg)

3 to 5 lb. pork roast (any)
olive oil
2 cans golden mushroom soup
1 large onion, diced
1/2 bell pepper, diced
4 C. water
1 clove garlic
2 packages Lipton Onion Soup Mix (or the homemade version from the forum)
1 package mushrooms, fresh (portabello are especially good)
garlic powder, salt, pepper, rosemary, or other spices to taste

Cut deep slits into roast on both sides. Peeled garlic, crush with spoon. Stuff garlic toes into each slit. Season Roast, heavely (will loose some during searing). Heat oil in lrg browning pot. Sear roast on all sides to golden brown. Remove roast from browning pot, place in large crock pot. Add all ingredents to roast in crock pot. Stir until well blended. Cook on high for 1 hour, reduce to low, cook all night (10-12 hrs).
