Hot water Bath Jaboticaba Juice ? (Think berries, plums)

Preserving the Bounty recommends processing cherry or berry juices in a hot water bath 5 minutes. Blue Book for 15. Of course these books don't address jaboticaba, a small black tropical fruit about the size of small plums to large grapes. I am preferring to juice them rather than mess with many seeds tough skin pulp etc. I am adding a cup sugar and 3/4 cup lemon juice to every 8 cups jaboticaba juice and try the 15 minute bath. Anybody in tropical climes with jaboticaba experience, or anyone who has tried hot water bathing berry juice, would appreciate comment.

I am a Chef in South Florida and have a restaurant with tropical gardens and jaboticaba trees. I have been making a wonderful vinaigrete with the fruit by taking the seeds out anf using a blender to puree skin and all, add olive oil and a good basalmic vinegar then strain through a fine china cap to remove any skin pieces. Keeping the skin will give you more flavor and a beautiful purple color. Makes a great sauce also
