Poached egg 101

greenspun.com : LUSENET : Cooking & Crafts : One Thread

The info I got on eggs benedict calls for a poached egg and there is a way to cook a poached egg with ease. Just place the opened egg in a little container, get your water boiling and then spoon the water into a fast circling flow with a tornado shaped cavity, dump in the egg and by the time the water slows the egg will have taken a solid shape that does not stick to the sides of the pan.

Also, adding some vinegar to the water will help the egg to coagulate. There will be no vinegar taste to the egg.

You can use poached eggs instead of hard boiled if you don't have eggs old enough to boil.
