Here is a quick and painless cure for celery that's gone limp and lifeless in your refrigerator.
Fill a wide-mouth vase or jar with cold water. Cut the bottom off the celery and place the stalks in the water (like flowers). Return the celery to the refrigerator for a couple of hours or overnight. It'll crisp right up.

One way to keep celery crisp is to store stalks wrapped snug, tight in aluminum foil. Wrap the whole thing, not washed or wash/dry individual stalks. Will keep a long time and remain crisp.
I have also crisped celery by soaking in ice water for a while.
