per, i like a dry cure for pork shoulder and such, wash and pat dry your pork,i make a mix of salt, black and red pepper,a little brown sugar, garlic and onion powder and a small amout of crushed cloves, rub all over,(the pork),cover and refrigerate for 4 to 8 hours(can go longer depending on size and thickness, when i get ready to toss it to grill i wipe most of the mix off so it dont burn before the pork is done, after the pork is half done i start basteing with a mix of soy sauce, worcestershire sauce, crushed garlic, you can add beer or wine if you wish, when done i remove from heat wrap in foil and let set 15 minute or so,i like a good hot and spicy horseradish sauce to dribble over pork, while you got the pork on the grill you can toss some baby red (or quartered med size)potatoes with olive oil, salt, pepper,a little basil, tyme, rosemary, crushed garlic, coat potatoes good and wrap in a peice of foil and toss on grill, and how about a side of roasted corn salad, roast a couple of ears of corn till you get a good set of grill marks and look god and smokey(coat ears with olive oil, salt)cut off cob add some roasted red, green, yellow, pepper slices, and add a couple of grilled green onions, corse chopped, fresh basil, fresh tyme, chopped roasted garlic, butter, salt and cracked black pepper, add soome good crusty bread or hot rolls and some cold drinks of choice,a fresh slice of cherry pie with some good vanilia ice cream, and a lot of b.s.ing among friends(about shooting of course, mybe a little babe talk at times)and enjoy, bobby

You got any ideas on how to BBQ a good piece of pork? Sauce, trimmings, the lot? Iīve got a good 2― pound piece waiting to be cooked on friday. Got it in advance, really like my meat tender. If nothing else, I will use some orange juice, syrup, liqid smoke, salt nīpeppa and onions. Let the steak soak in it for about 2 hours, then slow BBQ (about 4-5 hours, low temp). And then gobble down with some baked potatoes and a sauce w sour cream, peppers, cucumber, salt nīpeppa, tomatosauce and chilli. Should be okay, but any hints would be appreciated!
