I'm so aggrivated at myself...(freezer jam)

greenspun.com : LUSENET : Country Style Homesteading : One Thread

Thursday night I made a batch of freezer jam. So.... it's suppose to sit for 24 hours, then into the freezer. Last night, when the 24 hours were up, I forgot to put it in the freezer. Put the jam in the freezer this morning. Let's see....that would be about 36 hours out on the counter. Y'all think it should be ok? Or did it sit out too long? Thanks!

hmmmmmm,, well, when you eat it, let us know would ya ?? But Id say it should be ok to eat,, how long do you ever keep fruit out on the counter and such? If it had the sugar in it,, it would be more than fine, but,,,

Annie, I think that it's probably okay. What flavor did you make? I usually make enough strawberry freezer jam to last us the winter but those dang late freezes zapped most of our strawberries even though we covered them with row cover. @!#*&%!!!!

We lost most of ours also Bren. Annie, I really think it will be just fine. It is mostly in the freezer for long term storage. I can not imagine that any problem could have developed in that short a period of time.

A high concentration of sugar tends to act as a preservative. That's ONE of the reasons why honey doesn't spoil. I would eat it without hesitation.
