ITALIAN SAUSAGE SOUP

1-1/2 lbs sweet Italian sausage links 3 cups Water 2 (14oz) cans Low Sodium Beef Broth 4 medium Potatoes, peeled and cut into small chunks 2 Celery ribs-sliced fine 2 small Onions-sliced fine 2 medium Carrots-sliced fine 3 ears fresh Corn, cut kernels off 1/4 cup Worcestershire sauce 1 teaspoon dried Oregano 1/2 teaspoon dried Basil 1/2 teaspoon Thyme 1/2 teaspoon Rosemary, crushed 1 Bay Leaf

3/4 cup Ketchup 1/2 large green or red sweet Pepper-cut into small chunks OR 2 Tablespoons Pimento 1 Tablespoon minced parsley Salt and pepper to taste

Boil sausage to remove salt and fat. When sausage is cooked, remove from pan and put on plate to cool. When cool, slice into 1/4" slices.

In a soup pot or Dutch oven, over medium heat, put everything except the ketchup, pepper or pimento, parsley, salt and pepper.

Bring to a boil, then reduce heat, cover and cook over low heat for 1 hour or until sausage and vegetables are tender.

Add ketchup, green or red sweet pepper or pimento and parsley; cook 12-15 minutes longer or until pepper is tender. Discard bay leaf. Add salt and pepper to taste, if desired.

Stan are you part Italian ? My grandma was from Sicily , I wish I had gotten some of her recipes before she past on. She used to make raviolis from flour doe and stuff them with cheese and spices. Eating just isn't the same now that she's gone. Her pizza recipe was pre- Columbus, no tomatoes sauce, which was a new world fruit.

nope, not even an ounce of Italian in me,,I like and use recipes that are quick, easy,, adn taste good is all.
