Hubbard squash

Okay, folks...I've got three huge Hubbard squash. They range in weight from 7 to 9 lbs. Well they seem big to me anyways :-)!! There's only two of us here so how do I cook them so I don't waste any? Can I just cut off what I need and save the rest? Any good recipes?

Okay what I do with my squash is cook it till its real soft then plop it on a bed of rice. Just some butter. Hey I'm no cook but its pretty tasty that way! Also wouldn't it work to cook all of it till its real soft then bag it in serving sizes in the freezer? Frozen mashed potatoes taste okay why not squash?

Sure you can make a fool of yourself, Kirk. I do it ALL the time!! Your idea is pretty good actually. I just found a recipe where you put cooked squash on rice then pour a sour cream & chive sauce over it! Not sure about freezing it, but I guess it's better than doing nothin' with it.

BTW...why would you want to "stick to rock walls"? Wouldn't that be uncomfortable? Ha Ha!! What a lame joke...huh!!?? Don't mind me, I'm just sitting here...at 3 a.m. sleepless in Penobscot, looking for squash recipes :-)!

Your idea a fine one, Kirk. Cooked squash freezes up real well. You can use it in baked goods too, now or later.
