Capons. How do you go about castrating a cockerel?

I have a dozen or so chickens and from time to time the number of males increases. Instead of culling them before they are fully mature does anyone know how to turn them into capons (castrate them)or is that a job for a vet? I'm told they make a great eating bird. And will they still make a racket every morning?

Well I haven't done this!Read some articles, but haven't tried it. I would love to actually watch this being done. Having read the srticles, I think that is the only way I could learn. I think this is one of those pieces of information that is dying with those who know how to do it.
