what is the proper way of doing the sign of the cross? When you say 'Amen' do you press your hands together or touch your chin?

"In the name of the [Touch your forehead] Father [chest] Son [Left Shoulder] Holy [Right Sholder] Spirit, [then hands together for] amen."

This is the common way saying the prayer in the Latin (Roman) Rite.

In Spain and some other countries there is a custom after making the sign of the cross in the ordinary way, that you would kiss your thumb. When this is done the thumb laid across the forefinger forms an image of the cross to which the lips are pressed.

Our Othodox Brethren touch their right shoulder first and then the left shoulder.

It does not make much of a difference since what we are trying to do is CROSS ourselves, and the cross is the same whether we touch the right or left shoulder first.
